Blackberry Whipped Cream with PB & Whey Keto Killer Whey!

When you decide to follow a keto diet, or even a low carb, high fat diet (LCH), some previously forbidden foods get to make their way back into your life. Real whipped cream is one of those foods. Real whipped cream is one of the simplest desserts to make. It literally takes just a few minutes and will dress up any dessert. Never, ever use Cool Whip! So many chemicals! Homemade whipped cream is just heavy whipping cream beaten with a mixer on high until stiff peaks form. That’s it, nothing else. I guess you could make it by hand, but honestly, that’s a lot of work - or you could think of it as an opportunity for a workout. But using a stand mixer or hand mixer is much easier and faster.

 

Traditional recipes will have you add sugar to the heavy whipping cream before you beat it, but you don’t need the sugar. I like to add real vanilla extract instead. The vanilla flavor adds enough sweetness that the sugar isn’t needed. I use about a teaspoon of vanilla for one cup of heavy whipping cream. And I always figure that since I’m generally using the whipped cream as a topping for something already sweet, I don’t need to add any extra sugar.

One of my favorite desserts is whipped cream with fresh berries. Whipped cream is so rich, you really don’t need much. The sweetness of fresh berries with the richness of the whipped cream is just heavenly.

For this dessert, I decided to go ahead and mix the blackberries right in with the whipped cream. I handmashed the berries in a small bowl with a fork and then mixed them in with the whipped cream just as it was starting to form stiff peaks. Once the whipped cream was ready, I folded in more mashed berries to add some swirls of color.

And then you use the blackberry whipped cream as a topping for PB & Whey Killer Whey! Keto Ice Cream. The flavor combo is out of this world -like chocolate peanut butter and jelly. So good! You can use the whipped cream as a topping for any Killer Whey! keto/lchf or protein ice cream. And you don’t have to add blackberries. You can use any kind of berries. Or if you just do the vanilla, it goes with everything. I like to add any leftovers to my coffee. Enjoy!

 

 

BLACKBERRY WHIPPED CREAM WITH PB & WHEY KILLER WHEY! KETO ICE CREAM

***Makes 4 servings of Killer Whey! Keto Ice Cream topped with Blackberry Whipped Cream

*****Blackberry Whipped Cream alone makes 8 servings = 105 calories, 10g fat, 3g carbs, <1g protein.

Nutrition: 285 calories, 26g fat, 5g net carbs, 4g protein.

Ingredients:

  • 1 pint of PB & Whey Killer Whey! Keto Ice Cream (or flavor of choice)

  • 3/4 cup of blackberries (or berries of choice), divided

  • 1 cup of heavy whipping cream

  • 1 tsp vanilla

Directions:

  1. In a small bowl, mash ½ cup of berries with the back of fork, set aside.

  2. Pour heavy whipping cream into the bowl of a standing mixer with the whip attachment or into a medium-sized glass or metal bowl if using a hand-mixer.   Add vanilla and mix on high speed for 2-3 minutes until stiff peaks start to form when you lift the mixer blade.

  3. Add half of the mashed berries to the whipped cream and beat for another 30 seconds to a minute, until the berries are well incorporated. Once the berries are mixed in, gently fold in the remaining mashed berries.

  4. Scoop ½ cup servings of PB & Whey Killer Whey! Keto Ice Cream into four small bowls.

  5. Top Killer Whey! With about ¼ cup of the blackberry whipped cream and remaining whole berries.

  6. Enjoy!
